Paddle Crab Cooking

A couple of tips for cooking paddle crabs.

First tip - Don't throw them back when you catch them (often people catch them when they are drag netting for flounder) - mostly they are thrown back!

Second tip - keep the bigger ones only,

Third Tip - if you just want the meat.. remove the top shell - split the crab in half (vertically) - - remove the gills - roll the meat out with a heavy rolling pin...

Fourth Tip -  again split in half (leave the shell on this time) - remove gills - place on plate... drizzling with a cream based sauce (i.e. reduce cream with garlic and fish stock) - or for Pacific Fair - do the same - but replace the cream with coconut cream - YUM!

Mac's Brewery Ginger Beer Review


Well I bought a four pac of Mac's ginger beer today.... nice rustic labelling... quirky New Zealand style copy on the label.... Plus it was bloody cheap - $4 something for a 4 pac. So - say $1.10 a bottle.

"Ginger Beer is a great New Zealand tradition. Unfortunately that tradition frequently involves something that comes in large fizzy drink bottles and has a propensity to exploded because your auntie used too much sugar. Mac's Ginger Beer on the other hand.... perfection..... " etc... etc....

So simple math:

Bottle: .12c * 4 = .50c
Labels .4c *4 = .16c
4 Pac .6c
Marketing .50c
Distribution cost: .12c *4 = 80c
Store cut .70c


Say $3 per four pac - production cost.. leaving about .15 cents per bottle for the actual drink - the fluid that you drink.

The thing is man - Mac's Ginger Beer is just not spicy... and there is almost no heat from it - ... and the initial taste could be described as slightly sulphurous (eggy!) - definitely designed for ginger beer drinkers - who are not into ginger beer!

The marketing - yeh great - the drink itself.... tasteless.

Red Cod - Cooking

Dam - the Red Cod is a difficult beast.

It is prolific and easy to catch - and is often the catch of people surfcasting off sandy shallow beaches.


It looks just fine... sleek... red (of coarse) - a beautiful fish.

But it is difficult to cook - as it is very soft and mushy.

Some fillet it - and salt - the salt drawing out the excess water.

Some fillet it and mix it with kahawai - in fish pie - to tone down and balance the strong flavour of the kahawai... (often red cod and kahawai are caught in the same spots).

However - the best success I have had with Red Cod - is gently smoking it (whole as opposed to split).

The smoking seems to firm up the fish - and adds a lovely subtle flavour to it.

Eternal Artesian Water

The main point here - is the heavy New Zealand centric branding.

This product is mainly soldin the USA -with little or no presence in New Zealand.

Spicy Cabbage - Recipe

  • 2 oz butter
  • 1/2 tsp whole cumin seeds
  • 3-8 dried chilli's
  • 1 small onion
  • 2 cups shredded cabbage
  • 2 medium carrots grated
  • salt
  • Lemon juice 2 TBSP


Fry cumin chillies for 1 minute - add onion cabbage and carrots - stir for 5 minutes - stir in salt and lemon juice - and serve - also nice with red onion.

Marsala Mashed Spuds

  • 1 TBSP fresh mint and coriander mixed
  • 1 TSP Amchur Mango Powder
  • 1 TSP Salt
  • 1 TSP Crushed Black Pepper
  • 1 Fresh Red Chili Chopped
  • 1 Green Chili Chopped (seeded etc_
  • A little butter.


Mash the potatoes - and stir in the other ingredients.

Chicken Mulligatawny - Recipe

  • 6 green cardamon pods
  • 1 inch cinnamon
  • 4-6 curry leaves
  • 1 tbsp ground coriander
  • 1 TSP ground cumin
  • 1/2 TSP Ground Turmeric
  • 1 clove garlic crushed
  • 1 onion finely chopped 
  • 4 oz creamed coconut
  • Juice 2 lemons
  • Chicken stock

Yoghurt and Chilli Soup - Recipe

  • 2 Cups Yogurt Beaten 
  • 4 TBSP gram flour
  • 1/2 TSP Chili Powder
  • 1/2 TSP Turmeric
  • 2 fresh green chilli's
  • 2 TBSP Veg Oil
  • 4 whole dried red chilli's
  • 1 TSP cumin seeds
  • 3-4 Curry Leaves
  • 3 garlic cloves
  • 2 inch piece Root Ginger
  • Fresh Coriander leaves (Garnish)


Method
(1)
Mix yogurt, gram flour, chili powder turmeric and salt and green chilli's - simmer 10 minutes - without boiling.
(2)
Heat oil in a heavy pan and fry remaining spices garlic and ginger until the dried chilli's turn black. Add to the other ingredients - and rest for 5 minutes off heat.

Cauliflower + Coconut Curry - Recipe

  • 1 Cauli
  • 2 med tomatoes
  • 1 onion
  • 1 garlic
  • 1 fresh green chili - chopped and seeded
  • 1/2 tsp turmeric
  • 2 tbsp oil
  • 14 fluid OZ Coconut milk
  • 1 cup water
  • 1 TSP sugar
  • (1 TSP Tamarind pulp - soaked in 3 TBSP warm water)


Salt to taste. Food processor - onions, garlic, chili turmeric to a paste.

Heat oil in Wok or fry pan - fry spice paste without browning.

Add cauliflower florets and toss well - stir in coconut milk - water - - salt simmer 5 minutes - strain Tamarind - and reserve juice - and add it with tomato to pan 2-3 mins - thicken and season.

Cauliflower Soup (Spicy) - Recipe

This is a true gourmet soup!



  • 1 Cauliflower
  • 1 Onion
  • 1 Garlic
  • 1 TBSP grated ginger
  • 2 TBSP Turmeric
  • 1 TSP Cumin Seeds
  • 1 TSP Black Mustard Seeds
  • 2 TSP Ground Coriander
  • 1 litre (4 cups) vegetable stock
  • 1 1/4 cups yogurt
  • (stir in yogurt 5 mins before serving - make sure nice and hot!)

Rabbit with Mustard Sauce - Recipe

  • 12 Rabbit Joints
  • 2 TBSP's Flour
  • Bacon Fat or Dripping
  • 2 large onions sliced
  • 2 oz streaky bacon
  • 1 pint stock
  • Salt and Pepper
  • 1 heaped TBSP Dijon or French Mustard
  • Small Tin Evaporated milk
  • Chopped parsley
  • Croutons


Soak rabbit joints in water with sale and vinegar overnight. Drain and dust with a little flour - melt the bacon fat and fry with onions until brown. Stir in flour - add stock and seasonings etc... bring to boil. Cook in oven for 1 1/2 hours - if too much sauce reduce. Sprinkle with sauce and croutons before serving.

Green Tomato Relish

  • 3 KG green tomatoes cut into large chunks
  • Slice 500 gs onions finely and put both in bowl - sprinkle with 1 tablespoon salt - and leave overnight.
  • Drain off liquid and put in big pot with 2 finely chopped green peppers, 4 cups brown vinegar, 3 cups sugar, 1 level tablespoon curry (Vencat if possible). Cover pot and simmer for 2 1/2 hours.
  • Blend 2 level tbs dry mustard - 1 cup more vinegar - stir until boiling - and thick - simmer for 20 more minutes.

Chinese Drum Sticks - Recipe

  • 6-8 chicken drum sticks
  • 1 TBSP soy sauce
  • 2 oz Soft unsalted butter
  • 5 TBSP clear honey


Pre-heat oven to 450 deg D. Brush sticks with soy sauce. Beat honey and butter together and completely coat each drum stick. Place in a large pan lined with foil - and bake for 30 minutes. Turn occasionally BUT DO NOT PIERCE SKIN. Lower heat to 250 deg F - cook for 45 minutes.

Night Light Pudding (Lemon) - Recipe

Cream 3/4 cup sugar + 1 tablespoon butter. Add tablespoons sifted flour, juice and rind of 1 lemon,then yolks of 2 eggs well beaten and 1 cup of milk. Just before putting into oven, fold in beaten whites of 2 eggs. Put in pie dish (buttered) and stand in a pan of boiling water for 3/4 hour in oven at 350 degrees.

Pork Kraut Bake - Recipe

  • 4 pork chops (1/2 inch thick)
  • 1 Can of Sauerkraut Drained
  • 1 8oz can apple sauce
  • 1/4 cup finely chopped onion
  • 2 tablespoons brown sugar
  • 3/4 teaspoon caraway seeds


Brown Chops - discard fat -put in all ingredients and simmer.

Chilled Cucumber Soup - Recipe

  • 2 large cucumbers
  • 1 pint (500mls) Yogurt
  • 1 teaspoon salt
  • Pinch nutmeg
  • 2 teaspoons fresh dill


Do not peel - cut into pieces and blend with yogurt salt nutmeg + half the dill - chill and serve garnished (with the rest of the dill - dummy!)

Sauce for Corned Beef - Recipe

  • 1 Dessert Spoon Mustard
  • 1 DS Sugar
  • 1 egg
  • Scant 1/2 cup vinegar
  • 1/2 cup liquid in which beef was boiled cooled


Mix mustard + sugar in small pan. Break egg. Into this mixture + stir well - then add vinegar + beef liquid. Boil together. Stir well.

How to make Tartare Sauce - Recipe

  • 5 egg yokes
  • 15 F/OZ Oil
  • 1 TSP Salt
  • 2 TSP Sugar


Make into Mayonnaise
Add chopped gherkins and onions

For sauce for oysters
Add to this tomato puree with a drop of cognac or wine.

Lemon Syrup - Recipe

  • 1 Pint Lemon Juice
  • 1 lb sugar


Stir on low heat until sugar is dissolved. Boil few minutes. Bottle.

Homemade Lemonade


  • 6 small lemons
  • 2 lb sugar
  • 2 oz cream tartar
  • 1 gallon boiling water


Slice lemons - put into a bowl with sugar and CT and water - let stand all night. Strain and bottle.

Pipi Chowder - Recipe

  • 1 pint pipi's
  • 3 potatoes
  • 3 oz Bacon Chopped fine
  • 1 onion chopped fine
  • 2 tomatoes
  • seasoning


Fry the bacon and onion light brown. Add chopped potatoes and sliced tomatoes. Just - cover with cold water. Season well and simmer for 25 minutes. Add pipi's - and cook for 15 minutes - longer if necessary - thicken if required.

Stew de Boeuf a la Provençal

Cut about 3 lbs of lean stewing beef into large slices, put them in the following marinade, and leave for 24 hours.


A Wine marinade for meat

In a saucepan heat a wineglass of olive oil, when it is hot put in a sliced carrot, one sliced onion, and half a head of celery cut in inch lengths.

Let these vegetables brown lightly and pour in 1/4 pint of white wine and a small glass of wine vinegar. Add 4 or 5 stalks parsley, 4 shallots, 2 cloves of garlic, thyme, bay leaf, sprig of rosemary, 6 peppercorns and salt.
Simmer for 30 minutes.

Leave to cool and then pour over meat.

Take the pieces of meat out of the marinade and saute the bacon fat on both sides. Put the meat into earthenware  - pour over marinade - add fresh herbs and garlic, 3/4 lb of bacon cut into squares, 3 or 4 carrots, 3/4 Pound pitted black olives. Bake for 3 hours. 10 minutes before serving add 3 or 4 chopped tomatoes.

Serve with noodles.

Irish Apple Cake - Recipe

  • 8 OZ Self Raising Flour
  • 4 oz Sugar
  • 4 Oz Butter
  • 3-4 Cooking Apples
  • 1 Egg
  • Milk


Mix in ingredients (minus the egg and milk) - beat the egg and add to batter - then milk. Cook in square tin 375 deg F

  • 6 oz butter
  • 2 eggs
  • 1 1/2 sups sugar
  • 1 1/2 cups dessicated coconut
  • 2 cups self raising flour

  • 1 Lb medium meal
  • 1/2 lb Butter
  • 2 large tablespoons golden syrup
  • 1 cup self raising flour
  • 1 cup Castor sugar
  • 1 large desert spoon ginger

Caramel Crunch Fingers: Recipe

  • 1 cup flour
  • 1 tsp Baking Powder
  • 1/2 cup brown sugar
  • 1/2 cup cornflakes
  • 1/2 cup chopped walnuts
  • 1/2 cup coconut
  • pinch salt

Method:

Mix all the above ingredients add 5 oz melted butter. Press into sponge roll tin. Bake 10-20 minutes 350 deg F.

Icing:


  • 3 oz butter
  • 1 desert spoon golden syrup
  • 2 tablespoons milk
  • 1 desert spoon condensed milk
  • 1 tablespoons brown sugar

Baked Beetroot in White Sauce - Recipe

Serves 4: 3 beetroots (1 1/2 lb), 1/2 pint prepared white sauce, 1 spring onion or 1 teaspoon finel chopped onion to garnish Preparation Time: 9 minutes

Cut off stalks from the beetroot about 1 in. above the root. Wash carefully without damaging the skin. Wrap in a greaspoon paper. Place in baking tin in  a moderate oven (350 deg F), cook until tender - approx 2 hours. When cooked allow to cool slightly. Peel away skin and cut into cubes. Coat with white sauce and garnish with chopped onion. Serve with bacon dishes.

Brown Biscuits: Recipe

Brown Biscuits

  • 4 OZ Butter
  • 4 OZ Sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon baking soda
  • 1 desert spoon golden syrup
  • 8 oz flour
  • 1 tablespoon milk
  • a few sultanas


Method:
Put butter, syrup, sugar, milk in a pot, melt, let bubble a few seconds stirring. Add vanilla, stir, then add flour, baking soda and sultanas previously mixed. Teaspoon lots on a greased tray. Press lightly with a fork.
10 minutes at 350 degrees.

Fake Chinese Eggs

Here is a step by step guide - on how fake Chinese eggs are made.

I used to live in Singapore... and every few months.... fake Chinese eggs would appear in the press....and the markets... the yucky things!!

"Wouldn't it be easier to let a real hen make them?".... is the sort of thought that pops into your head!

Wikileaks - US Government bullies countries into taking their GMO food


Surprise surprise... the US bullies countries into taking their genetically modified food products.

I guess it is the only way that the 'SHIT' gets sold.

I sometimes think that New Zealand should remain completely GMO free - maybe even go fully organic - as a point of difference. Perhaps that would have been better than building cycle tracks.

I am wondering how much of our food is already GMO.... I am thinking potatoes.... of no specific type (i.e. Boiling Potatoes). Some of the varieties just don't cook... no matter how long you boil them. I am guessing they are GMO - probably from China.

Church Hill Restaurant - Stewart Island


The Church Hill restaurant - is situated on Stewart Island's - half moon bay.

By the way - Stewart Island is pretty dam remote - I have done the trip once... the place is magical.

I caught a ferry over from Invercargill.... and bumpy wee journey that was!

There is no place to eat - that is more Southern - than the Church Hill restaurant.

Yes - I haven't been - I was only on Stewart Island long enough to do a fishing trip - i.e. catch a few blue cod! But - I'm sort of into - finding cool restaurants in reasonably remote New Zealand spots right now.
