Kumara Salad

Kumara Salad is another classic dish.

  • 500 grams Kumera (or sweet potato)
  • 2 oranges
  • 3 thin slices onion
  • 2 teaspoons chopped parsley
  • 1/4 cup oil
  • 1 tablespoon wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground pepper
Peel the kumara, and cook in boiling salted water until tender. Drain well, slice, and place in a bowl.

Peel the oranges so all the white pith is removed, and slice them cross ways. Break up the onion slices into rings.

Add the oranges and onions to the kumara.

Chop the parsley. Place the oil, vinegar, salt and pepper in a scretop jar. Shake well, pour over the salad ingredients, and toss lightly. Place in a salad bowl, and chill until serve time.
